Ingredients:
- 2 cups round rice (Camolino or you can even use risotto rice)
- 4 cups chicken stock (homemade or good-quality store-bought)
- 1 medium onion, finely chopped
- 1 medium carrot, finely chopped
- 1 small carrot, finely grated (for color)
- 1 celery root, diced
- 2 stalks green celery, chopped
- 1 parsnip, diced
- 1 small potato, diced
- 3 tbsp butter
- 2 tbsp olive oil (optional, for sautéing)
- Salt and pepper to taste
- Fresh parsley, chopped (for garnish)
Instructions
Prepare the Rice:
If pre-soaking the rice: Soak it overnight, then rinse thoroughly and drain before cooking.
Alternatively, pre-boil the rice in a pot of water for 5 minutes, then drain. This helps remove arsenic.
Sauté the Vegetables:
Heat olive oil (or butter, if preferred) in a large pot over medium heat.
Add the onion and sauté until translucent.
Add the chopped carrot, grated carrot, celery root, green celery, parsnip, and potato. Stir well and cook for about 5–7 minutes, until the vegetables start to soften.
Cook the Pilaf:
Add the pre-boiled or soaked rice to the pot and stir to combine with the vegetables.
Pour in the chicken stock, ensuring it covers the rice and vegetables by about 1 inch.
Bring to a boil, then reduce the heat to low, cover the pot, and let it simmer for 15–20 minutes. Stir occasionally to prevent sticking.
Finish with Butter:
Once the rice has absorbed most of the liquid and is tender, stir in the butter. Adjust the seasoning with salt and pepper to taste.
Rest and Serve:
Remove the pot from heat and let the pilaf rest, covered, for 5 minutes. Enjoy!
