The rainy autumn weather plus a little one with a runny nose called for this comforting bowl of Italian Pastina Soup! π₯£π Itβs the perfect, soothing meal to warm up from the inside out and help the sniffles go away π€§
This soup is super easy to prepare and ready in 40 minutes. Hereβs how to make it:
Ingredients:
– 4 big carrots π₯
– 2 stalks of apio celery
– 1 small parsnip
– 1 small piece of celery root
– 3 cloves of garlic π§
– 2 big yellow onions
– Chicken broth (I boiled some chicken wings for this π)
– Small shaped pasta (pastina) π
– Juice of half a lemon π
Instructions:
1. Prep the Veggies: Roughly chop the carrots, celery, parsnip, celery root, onions, and garlic.
2. Boil in Chicken Broth: Add them to your pot of chicken broth and simmer for about 30 minutes until all the veggies are soft.
3. Blend: Once cooked, blend the veggies directly in the broth until smooth. This turns the broth into a creamy, veggie-packed base.
4. Add Pastina: Stir in your small-shaped pasta (pastina) and let it cook for about 4-6 minutes until tender.
5. Finish with Lemon: Squeeze in the juice of half a lemon to brighten the flavors. π
Give your little one some parmesan cheese to sprinkle on top!
