Parsnip Fritters Recipe

Ingredients:

  • 3 medium parsnips, peeled and grated
  • 3 spring onions, finely chopped
  • 2 large eggs
  • 4 tablespoons all-purpose flour (or a gluten-free alternative)
  • 2 tablespoons fresh dill (or your favorite herbs), finely chopped
  • Salt and pepper to taste
  • 1-2 tablespoons olive oil or neutral oil for greasing

Instructions:

  1. Preheat the Oven:
    Preheat your oven to 200°C (390°F) and line a baking sheet with parchment paper. Lightly brush the paper with oil to prevent sticking.
  2. Prepare the Mixture:
    In a large mixing bowl, combine the grated parsnip, chopped spring onions, and dill. Add the eggs and mix until the ingredients are well coated. Gradually stir in the flour, adding a pinch of salt and pepper to season.
  3. Shape the Fritters:
    Take small portions of the mixture and shape them into patties, about 1-2 cm thick. Place them on the prepared baking sheet, leaving a little space between each fritter.
  4. Bake the Fritters:
    Bake the fritters in the preheated oven for 15 minutes. Carefully flip them over using a spatula and bake for an additional 10-15 minutes, or until golden brown and crisp on both sides.
  5. Serve:
    Remove the fritters from the oven and let them cool slightly before serving. Enjoy them warm with a dollop of yogurt, sour cream, or a side salad.
